Beans & smoked pork

  • Pinto beans, cooked from dried 250 g (start from soaked dried beans)
  • Smoked pork knuckle (ham hock) 1000 g
  • Kolbász or chorizo, sliced 100 g

How to make Jókai bableves

  1. Soak the beans. Rinse and soak dried pinto beans in plenty of water for 8–12 hr. Drain and rinse.
  2. Slow-cook the smoked knuckle. Put the pork knuckle in a large pot, cover with water by 3 cm, bring just to a boil, then simmer gently until fork-tender and pulling from the bone, about 3.5–4 hr. Lift out and reserve ~500 ml of the knuckle broth. Strip the meat and discard the bone.
  3. Build the paprika-onion base. In the soup pot, heat ~20 g lard over medium. Add onions and cook until soft and lightly golden, 5–7 min. Stir in garlic, carrots, parsnip, bell pepper and tomato, then cook 5 min. Add paprika, thyme, black pepper and bay; cook 1–2 min to bloom spices.
  4. Simmer the soup. Add soaked beans, the reserved knuckle broth, 500–1000 ml water and the 1 chicken broth cube. Add diced sweet potato. Bring to a gentle boil, then simmer partly covered until the beans are tender, 60–90 min, stirring occasionally. Top up with hot water if needed.
  5. Sear the kolbász. In a small pan, heat the remaining lard and quickly fry the sliced kolbász until edges crisp, 1–2 min. Scoop out and set aside.
  6. Make a paprika roux, thicken, and finish. Whisk the flour into the kolbász fat to make a blond roux, 1–2 min. Off heat, whisk in a ladle of hot soup to loosen, then stir the roux back into the pot. Add the shredded pork knuckle and the seared kolbász. Simmer 5–10 min to thicken and marry flavors. Adjust seasoning, then stir in chopped parsley and serve.
Make-ahead & storage: The stew tastes even better the next day. Chill up to 5 days or freeze for 2–3 months. Reheat gently until piping hot.

  • Use part of the knuckle broth for depth, then dilute with water to manage sodium while keeping smoke complexity.
  • Adjust lard and pork to your goals: drop lard to 10–20 g and trim visible skin and fat from the knuckle to lower saturated fat while still blooming the paprika.
  • Swap meats if needed: kolbász can be replaced with smoked chicken sausage to reduce calories and saturated fat, but you will lose some paprika-smoke intensity. Compensate with an extra pinch of paprika and a splash of knuckle broth.

Step-by-step instructions

Step 1: Soak and prep

Soak the beans for 8–12 hr, drain and rinse. Rinse the smoked knuckle.

Crisp kolbász. Make a blond roux with pan fat and flour, loosen with hot soup and stir back in. Return pork and kolbász, simmer 5–10 min, finish with parsley and season to taste.

Do I have to use lard?
Lard is traditional for paprika flavor. You can use a neutral oil, but bloom the paprika briefly to keep the depth.
Can I skip the roux?
Yes. The soup will be looser. For a gluten-free option, mash some beans into the broth instead.
How salty should it be?
Smoked knuckle and kolbász add salt on their own. Start light, then adjust late in the simmer.
Best side?
